2 tablespoons olive oil
1 small onion (chopped)
2 cloves of garlic (finely chopped)
1.5 cups raw white rice
3 cups chicken soup
2 tablespoons chopped fresh parsley
1 tablespoon fresh dill
1 lemon juice + zest
Instructions
- Heat the olive oil in a medium saucepan over medium heat. Add onions and fry until translucent. Add garlic and cook for another minute.
- Add rice and fry for 5 minutes, stirring frequently.
- Pour in the chicken broth and mix well. Once it boils, reduce the heat to medium-low, cover and simmer for about 20 minutes.
- Remove from the heat, open the lid, and fluff the rice with a fork. Add parsley, dill, lemon juice, and lemon zest. Mix until well combined.
