Delicious walnut recipes for winter
Chef Meghna Kamdar of Chilean Walnuts shared with HT Lifestyle three delicious recipes that not only showcase the rich, nutty flavor of walnuts, but also bring a little comfort to your table.
1. Tomato soup with crunchy walnut topping
material:
1 large red bell pepper
5-6 large tomatoes
1 medium-sized onion
3-4 cloves of garlic
2 tablespoons olive oil
salt and pepper
Walnuts for topping
Method:
1. Mix everything well
2. Bake in the oven at 200 degrees for 20-25 minutes until browned.
3. You can also do the same thing in an air fryer. If you don’t have an oven or air fryer, you can also roast them in a skillet.
4. Once cooled, stir with a mixer.
5. Strain the mixture
6.Adjust the concentration with water
7. Reheat the soup
8. For toppings, prepare basil leaves, roasted walnuts, and feta cheese (optional).
9. Add this topping to the soup just before serving.
2. Carrot walnut milkshake
material:
6-7 walnuts
6 seedless dates
Carrot
cardamom powder
milk
Method:
1. Place 6-7 walnuts in a mixie jar.
2. Prepare 6 seedless dates (make sure to add the water the dates were soaked in)
3. Add grated medium-sized carrots.
4. Add cardamom powder (you can also add cinnamon or dried ginger powder instead)
5. Stir again and you have the most delicious sugar-free energy booster walnut milkshake.
6. You can also add grated carrots and tasty walnuts when serving.
7. You can drink this any time of the day, but I personally prefer to have it as breakfast.
3. Crispy walnut date roll
material:
150g dried toasted walnuts
100gm paneer
10-12 days
pinch of salt
a little black pepper
A few drops of oil or ghee for brushing
drizzle honey on top
some more chopped walnuts
spring roll sheet
Midas slurry (maida mixed with water)
Method:
1. Prepare 150 grams of dried toasted walnuts.
2. Add 100g paneer and 10-15 chopped dates.
3. A pinch of salt and pepper brings out the date flavor and balances out the sweetness.
4. Mix everything. Take spring roll sheets and stuff them with walnut paneer date mix.
5. Next, prepare the midas slurry and apply it on the border of the spring roll sheet so that it sticks from all sides when rolled.
6. Place a piece of butter paper in the bottom of the air fryer, place these rolls and brush with oil and ghee.
7. Heat the fryer to 180 degrees for 16-18 minutes. If the fryer stops mid-way, rotate the roll and reapply the oil.
8. Then air fry. Once air-fried, drizzle some honey on top and sprinkle chopped toasted walnuts on top.
