The first and most important step in making medu vada is immersion Urad Dal. Soak the dal overnight or for at least 5-6 hours. If the dal is not soaked properly, you can still grind it and mix it. However, when you fry it, you will find that the inside of the vada is not soft. There may be hard parts and the texture may not be pleasant. So soaking it well will prevent the vada from hardening.
2. Do not add too much water while grinding the dal.
Once the soaked dal is drained, the next step is: Smash Make a coarse paste. It is important to pay attention to the concentration of this mixture. Add the required amount of water to start the grinding process smoothly. If you add too much, you’ll end up with a runny paste that will be difficult to shape later.

4. Carefully shape the vada.
One of the distinguishing features of medu vada (when compared to other vadas) is its donut-like shape. Wondering how to open that elusive hole in the middle of Vada? There are a few things you have to be careful about. First, before you start shaping the vada, wet your fingers and palms. Please note that the dal base we prepared earlier is sticky by nature, so proceed accordingly.
Use four fingers to scoop out a small amount of the mixture and use the thumb or index finger of your other hand to make a hole. Alternatively, you can shape the vada on a flat surface lined with parchment paper, clean plastic or a small metal thali/plate. Whatever you choose, make sure the surface is greased to prevent the vada mixture from sticking to it. Place the entire piece on this surface and form a hole in the center. Then carefully turn the paper/plastic/plate over and place it on top of the hot oil.

Frying the vada at the right temperature is essential to get a perfectly crispy outside. Add the vada only after the oil is hot enough. You can drop a small portion of the mixture first and see if it starts to crisp up right away. If you add the vada to the oil too early, there is a high chance that the vada will absorb the excess oil, resulting in a heavy and soggy consistency. If you overheat the oil, the vadas may burn. So, fry it on medium heat and flip it if necessary so that it gets golden brown on all sides.
