- step 1Cook buckwheat according to package instructions. Rinse with cold water and drain well.
- step 2Meanwhile, combine horseradish, parsley stalks, and lemon zest in a small bowl. Set aside.
- step 3Coarsely grate the tomatoes (3 cups pulp, discarding the skin) into a large bowl. Stir in lemon juice, garlic, 1 1/2 teaspoons kosher salt, 1/2 teaspoon ground black pepper, and olive oil.
- step FourToss the sauce with the noodles and sprinkle with the horseradish mixture, more pepper, parsley and basil leaves.
