chocolate chip cookie recipe
1/2 cup (100g) granulated sugar
3/4 cup (165 g) packaged brown sugar
1/2 cup (115g) unsalted butter, melted
1 teaspoon vanilla essence
1 1/4 cups (155 g) all-purpose flour
4 ounces milk or semisweet chocolate chunks (110 g)
4 oz dark chocolate chunks (110g), or to taste
In a large bowl, mix together the sugar, salt, and melted butter until a smooth, lump-free paste forms.
Add the eggs and vanilla and whisk until the mixture is smooth and ribbons fall off the whisk, letting it sit for a moment before adding it back to the mixture.
Sift in the flour and baking soda and mix with a spatula. Be careful not to overmix as this can cause gluten to form and make the cookies tough.
Add the chocolate chunks, mix and chill the dough for at least 30 minutes. For a richer toffee-like flavor and deeper color, you can choose to chill the dough overnight. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
Using an ice cream scoop, place the dough onto the cookie sheet, leaving at least 4 inches (10 cm) of space between cookies to spread evenly and 2 inches (5 cm) from the edge of the tin.
Bake for 12-15 minutes or until edges are barely brown. Allow cookies to cool completely before serving.
