Winter brings delicious citrus fruits, and of course, the holiday season brings chocolate. Combine the two in this delicious and timeless recipe. 2 large oranges
1 cup of water
1 cup sugar
3 ounces dark chocolate

Wash the oranges thoroughly under running water.
Cut off the top and bottom. Make 4-5 vertical cuts from top to bottom of the skin and down to the pulp.
Peel the skin carefully by hand. Cut each piece into thin strips and transfer to a saucepan. Pour in about 2 cups of water and bring to a boil. Boil for 5 minutes, then drain. Pour fresh water (2 cups) into the same pot and add the zest. Repeat the same process. This will remove some of the bitterness from the skin.
Dissolve 1 cup sugar in 1 cup water in a small saucepan, add the zest and simmer for about 45 minutes, or until the zest is translucent.
Once finished, spread out on a wire rack so the sugar syrup can drip off and the skins can cool.
Melt the chocolate in a double boiler. If you don’t have a water heater, melt the mixture in a heatproof bowl of boiling water. Use a fork to dip the skin into the chocolate. Transfer to a baking sheet lined with parchment paper. Refrigerate to harden completely for at least 1 hour. Serve and enjoy!
