As the new year begins, many people are recklessly working toward their resolutions. Maybe your goal is to exercise more, listen better, or go on that vacation you’ve been saving up for. Or maybe you’ve decided that this is the year you start cooking more.
Since moving to Colorado in 2022, I have become an avid cook. I love trying new recipes and having dinner parties with friends.
This is not surprising, as I grew up in a family where cooking was the best thing we could do together. Some of my favorite childhood memories are of us all crammed into a small kitchen in an alley, chopping, slicing, mixing, boiling, and laughing together.
As a gift to you earlier this year, I’ve collected some of my family’s favorite recipes for 2023. Use these to achieve your resolutions and put those kitchen toys you got for Christmas to good use. And support local businesses while doing it.
Creamy Thai sweet potato curry from a pinch of yam
Curry is always one of my favorite cozy meals, especially during the colder months. I usually improvise curries and this recipe is pretty close to what I usually make. I love adding sweet potatoes for a boost of vitamins and flavor. Don’t forget to top with peanuts and lime. Pair this dish with Chardonnay. This dessert came to me spontaneously one night after my friend ate a huge amount of leftover rice from a dinner we made. In our case, we used eggnog instead of milk and added cinnamon to the nutmeg and cardamom.Visit us for great spices savory spice shop or pensy’s spice You might find an even better spice combination for this dish on Main Street in Littleton. For an extra adult kick, I highly recommend adding some bourbon to this.

This simple combination of kale, goat cheese, pumpkin, pomegranate seeds, and nuts is delicious. I love pistachios, so I added pistachios. Get extra virgin olive oil from EVOO Marketplace You can make the dressing to make Main Street dressing, or you can keep it as simple as adding salt and pepper to the oil.

This is more of a template for creativity than a recipe. I love using beans because they are a great source of protein and a creative tool for adding creaminess and texture to any meal. But in this dish, they are the star. Made with cannellini beans and garnished with chopped tarragon, red onion, artichoke, and cherry tomatoes. All of this was mixed with a light dressing made with Dijon mustard, olive oil, red wine vinaigrette, and honey. A light, fresh and healthy dish!
