Halloumi is well known as a meat substitute in hamburgers or as an addition to delicious kebabs for barbecues. But there’s more to this versatile cheese. Leila shares some of her favorite cooking methods, including a delicious Cypriot recipe for halloumi with pasta.
If you’re looking for a light and simple pasta recipe, try this delicious rigatoni filled with a halloumi and mint mixture.
This quick and easy dish is drizzled with pure olive oil. However, if you prefer, you can also make tomato sauce or cream sauce to serve over the pasta.
Material →
– Rigatoni Pasta 500 x grams
– 300 x grams of grated halloumi
– 2 eggs (whipped)
– 1/2 x cup finely chopped mint
– Pepper as needed
– 1 tablespoon olive oil (add for drizzle)
Method →
– Add the beaten eggs, grated halloumi, and chopped mint to a bowl. Add the pepper and olive oil and stir until the mixture is well combined.
– Using a tablespoon, place one portion of the cheese mixture onto each piece of pasta. Place your hand under each piece of rigatoni as you add the mixture to keep it from falling out, and use the tip of the spoon to press in the cheese mixture so it fills all of the pasta.
– Place the pasta in a large pot of boiling water and carefully place each portion into it.
– Cook over very low heat for about 25 minutes, or until the water is completely reduced and the pasta is cooked through.
– Place the pasta on a plate and drizzle with olive oil.
