Some people prefer fresh orange juice for breakfast, while others enjoy less sweet orange juice with black salt and chili powder. But have you ever tried making a proper meal using oranges? NDTV’s Food Editor Shubham Bhatnagar came across ‘Narangi Maas’ during his recent trip to Rajasthan. It looked so unique and delicious that he tried to recreate the dish at home. You’ve never had a dish like this before.

About Narangi Maas: What is the origin of Narangi Maas?
You have surely heard a lot about the very popular Rajasthan Lal Mars, Safed Mars and Jungle Mars. All these dishes are associated with the Rajput royal family of Rajasthan. Lal maas was prepared using game meat and matania chili peppers, while jungle maas was reminiscent of cooking game meat in the jungle using minimal ingredients. Safed Mars, on the other hand, has its origins in royal kitchens and contains a variety of exotic ingredients.
Similarly, Narangi Maas also has a very interesting story. Firstly, Narangi represents orange and Maas represents meat. So, this Rajasthani meat recipe is made with an infusion of freshly squeezed orange juice. According to Royal Sailana’s Raja Digvijaya Singh, this dish is quite new compared to other Rajasthani meat recipes. In the palace of Raja Digvijaya Singh there were many orange trees that produced a lot of fruit. To avoid waste, royal chefs started using these oranges in their recipes and the very unique Narangi His Maas was born.

How to make Rajasthani Narangi Maas at home:
Here we will share some tips on how to make narangimaasu that we put into practice when we returned home. Although we agree that this is not the exact recipe from the royal kitchen of Sairana Palace, the inspired dishes are no less spectacular. This recipe requires no pre-marinating and tastes best when made with ghee.
Step 1. Heat ghee and oil in a large kadai.
Step 2. Add ginger and garlic and stir well.
Step 3. When the raw smell of ginger and garlic disappears, add mutton and stir-fry well.
Step 4. Add red chili powder, turmeric powder, salt, cumin powder to it and let everything cook.
Step 5. Once the oil comes out from the masala, add water and slowly cook the meat.
Step 6. Add whipped dahi and mix to give flavor and shine to the meat.
Step 7. Once the meat is boiling, add some freshly squeezed orange juice and bring to a simmer.
Once done, transfer the narangi maas to a bowl, garnish with oranges and serve hot. Narangi His Maas can be enjoyed with traditional Kobaroti or with regular parathas, roti, naan or even rice.
