Thalipeeth, a traditional dish, is made by combining flours such as jowar, bajra, wheat and gram flour with spices, chopped vegetables and herbs. Jowar and bajra flour are available in supermarkets these days and the rest of the ingredients are also easy to find in your kitchen. Serve your thalipeeth with curd or pickles and you won’t be craving anything unhealthy until your next meal. Here’s the recipe:

1/4 cup whole wheat flour
1/2 cup jowar flour
1/4 cup bajra flour
1/4 teaspoon turmeric powder
1/2 teaspoon cumin seeds
2 tablespoons flour
1 onion finely chopped
1 small tomato, finely chopped
1/4 cup coriander leaves
1 finely chopped green chili
Ghee
water
salt

Mix wheat, jowar, bajra, onion, tomato, green chili, coriander leaves, turmeric powder, gram flour, cumin seeds and salt in a bowl.
Add water and mix to form a soft dough with a chapati-like consistency.
Divide the dough into 5 equal parts and form each into a ball.
Moisten your finger with a little water to prevent sticking, and tap the ball to form a round disc.
Heat a frying pan and once hot, cook the thalipeeth on it and drizzle some ghee around the edges
Both sides should be golden brown
Enjoy with pickles, chutneys, yogurt, etc.
