Chickpeas are the star of this recipe for vegan white bean chili. I originally intended to develop this recipe as a chickpea stew, but I found the flavor and texture to be similar to that of chili, so I’m sharing it here. enjoy.

🌶️ Ingredients and Substitutes
oil: I love using avocado oil in this recipe, but feel free to use whatever oil you have on hand. Olive oil, vegetable oil, and grapeseed oil are all great options as well.
Garlic and onions: A classic aromatic flavor base. We do not recommend omitting this.
jalapeno pepper: Jalapeno chili is a classic choice for white chili peppers. That said, if you’re sensitive to spice, feel free to simply omit it, or use a spicier chile like serrano or chili if you like it more punch. scotch bonnet.
Green chili: A can of diced Hatch green chiles not only adds flavor but also helps thicken this chili and is a classic choice for white chili recipes.
Special spice blend: A blend of cumin, paprika, oregano, garlic powder, and cayenne pepper adds depth of flavor and spice.
sugar: I think the little bit of sweetness adds depth and helps complete all the flavors in this chili recipe. I like to use coconut sugar, but you can use white sugar, brown sugar, or any sugar-free sweetener if you prefer.
Chickpea: Canned chickpeas or chickpeas cooked from scratch are both suitable for this recipe.
Coconut milk: The coconut adds creaminess and helps thicken the chili a little as it cooks down. If you are not on a vegan or dairy-free diet, you can use heavy cream if desired.
water: Water is a good choice as an additional liquid in this recipe, but if you prefer to use broth, you can also use any good vegetable broth.
coriander: I’m sure some of you aren’t fans of cilantro, in which case use fresh parsley or omit it entirely. Otherwise, cilantro adds a bit of bright freshness to this recipe.
lime: Fresh lime juice is the acid needed in this recipe to balance the flavors. If you don’t have lime juice, lemon juice or vinegar will work well.
🔪How to make chickpea chili
- In a large pot, sauté garlic, onion, jalapenos, and corn in oil for 10 minutes.
- Add green chillies and spices. Fry for a few more minutes.
- Add chickpeas, coconut milk, and water.
- Once it boils, reduce the heat to low.
- Simmer for 15 minutes.
- Turn off the heat and stir in the coriander and lime juice.
- Add salt to taste.
- If desired, top with garnishes before serving.
