Florida Grouper Sandwich
■ 8 fillets (3 ounces) of Florida grouper, thinly sliced
■ 2 Florida tomatoes (sliced)
■ Cajun seasoning 1 teaspoon
8 small rolls
■ 1 romaine lettuce (small ball), shredded
■ 1 red onion (thinly sliced)
■ 1 tbsp cooking oil
■ Mayonnaise 1/3 cup
• 1/2 lemon (squeezed juice)
■ Paprika 1 teaspoon
• cayenne pepper (optional)
■ Sea salt and freshly ground pepper
New Florida Potato Salad
■ 6 cups new Florida potatoes, quartered, cooked and cooled
2 tablespoons of rice vinegar
■ 1 tbsp olive oil
2 tbsp mayonnaise
■ Assorted colored Florida peppers, diced 1/2 cup
1/2 cup red onion (finely chopped)
■ 2 tablespoons chopped fresh parsley
■ Sea salt and freshly ground pepper
Preparation
Florida Grouper Sandwich
■ Preheat a large sauté pan over medium-high heat. Lightly season grouper fillets with Cajun seasoning, salt, and pepper. Add cooking oil to a preheated frying pan and carefully add the seasoned fish fillet.
■ Cook the fillets until golden brown and cooked through, about 2 minutes per side, depending on thickness. Place the fillets on the cut open rolls. Combine mayonnaise, lemon juice, paprika and cayenne pepper in a small bowl.
■Taste and season with salt and pepper. Assemble the sliders with lemon mayonnaise, lettuce, tomato and red onion. Use bamboo skewers if necessary to keep the sliders upright. Enjoy with potato salad.
New Florida Potato Salad
■ Combine all ingredients in a medium-sized mixing bowl. Stir ingredients to mix thoroughly. Taste the potato salad and season with salt and pepper. Serve chilled.
