Oysters have a bit of a morning vibe, so I paired them with a frozen Bloody Mary. The Bloody She Mary mix can be made as spicy as you like, and you can also add other raw shellfish such as queen scallops, shrimp, or clams to the granita. I always have a tub in my freezer. If you don’t have fresh horseradish, stir in some horseradish sauce to taste.

Bloody Mary granita
- Vodka 30-50ml
- 1 tablespoon Worcestershire sauce
- half lemon juice
- 3-4 drops of Tabasco, or more, depending on how spicy you like it
- tomato juice 200ml
- Appropriate amount of celery salt

- 12 rock oysters, peeled horseradish, freshly grated
Method
- Mix all granita ingredients and transfer to a container with a lid. Place in the freezer for 2-3 hours, stirring occasionally while freezing.
- Once frozen, break it up into small crystals with a spoon or knife and put it back in the freezer until you need it.
Spoon a frozen Bloody Mary Granita over the oysters and grate fresh horseradish to serve.
