Peri peri, also known as ‘piri piri’ or ‘piri piri’, is a type of chili pepper used in seasonings and sauces, with its origins in the Portuguese-African culinary tradition, particularly in Mozambique and Angola, according to reports. Derived from the Swahili word “piripiri”, the word literally translates to “pepper”. The key ingredient in this seasoning is peri peri chili pepper. Typically, peri peri chili sauce is made with other ingredients such as lemon, garlic, oil, and mixed herbs. This concoction creates a fiery, tangy flavor.

Add maida (all-purpose flour) to a bowl and sprinkle with a pinch of salt. Keep adding water to the maida in between and knead the dough. Let stand for 30 minutes. In a separate bowl, marinate the chicken with salt, garlic powder, paprika powder, black pepper powder, oil, vinegar, soy sauce, and peri-peri sauce. Let stand for 30 minutes.
Meanwhile, form the kneaded dough into small balls and make parathas. Make sure it’s cooked properly and nice and crispy. Now, prepare a pot and throw in the marinated chicken. Simmer until the meat is tender and all the seasonings have been absorbed. You can also add peri peri seasoning to the chicken at this point if you want to up the spice level. Once cooled, leave it to cool.
Take the cooked parathas and layer them with mayonnaise and ketchup. Place lettuce leaves in between, tomatoes, onions, peppers, and sweet corn. Add the cooked chicken to the produce.
