What is Asian Cucumber Salad?
Well, where are my cucumber lovers? If you love this vegetable, you’ll love this delicious (and easy!) recipe. This Asian Cucumber Salad is a light and delicious dish. Based on thinly sliced English cucumbers, various flavors are combined to create a refreshing and crunchy texture. Dressings are similar to marinades, so the longer you let them in, the stronger the flavor and the more the flavors are absorbed.
Before eating, this salad is often garnished with red pepper flakes or sesame seeds. I like to add these Because it provides a hint of spiciness (don’t worry, it’s not too hot!) and a delicious crunch. The result is a simple yet flavorful side dish or appetizer, especially perfect for the warmer months.

Tips and variations
There are a few things you can do to change the mood of this Asian cucumber salad. You can make it spicier, gluten-free, or even crunchier.
- Soak in salt: It is important to add salt to the sliced cucumbers. It draws out excess moisture from the cucumbers, creating a drier, crunchier cucumber.
- Gluten Free: If you can’t eat gluten, choose the gluten-free option by using tamari instead of soy sauce.
- Cucumber options: Japanese cucumbers are traditionally used in this salad, but they can be difficult to find. I used a similar English cucumber. You can also use mini cucumbers in a pinch if you have them.
- Add peanuts. Add chopped peanuts for extra texture and flavor!
- Let’s make it spicier: Add 1 teaspoon of garlic chili paste to the dressing and heat through.
- Serve chilled: This Asian Cucumber Salad is best served chilled. Give the dressing time for all the flavors to meld. In addition, it also creates a crunchy texture of chilled cucumber.

Can you store leftovers?
Asian cucumber salad has the best texture and flavor when it’s fresh, so it’s best to enjoy it immediately after making it. Keep in mind that cucumbers can become juicy and soft over time, so your salad may not stay crisp and fresh after a day or two.
