First, fry the Kashmiri red chillies, green cardamom, black pepper, fennel seeds, cumin, coriander seeds and cinnamon in a pan. Once cooled, transfer the spices to a blender and grind them to a fine powder. Now you have a fresh and aromatic shawarma masala. Transfer the masala to an airtight container and store it.
