To make this dish you will need to heat up your barbecue or grill and if you have fresh honeycomb available then the whole dish will look and taste really gorgeous.
According to Aikman-Smith, this pudding is best paired with Vin Santo, an Italian dessert wine. Waitrose.
In his book, Aikman Smith writes, “Peach season can’t last forever! Plump, ripe, sweet and juicy peaches can be sliced up and used to top salads, in ice cream or tarts, or simply eaten with a delicious cheese.”
Here, peaches are soaked in Vin Santo and roasted over mesquite charcoal until charred and caramelized. Enjoy with a small glass of Vin Santo.”
