“Cordon Bleu” means “blue ribbon” in French and symbolizes culinary excellence. This dish is typically breaded, pan-fried meat wrapped in cheese, but there are also modern baked variations. The ingredients include breadcrumbs, gammon, Swiss cheese, and chicken, topped with a rich cream sauce flavored with Dijon mustard.

Method:
- First, cut the chicken breast in half lengthwise like a book.Place between pieces of parchment paper and use a meat hammer to flatten them.
- Next, marinate the chicken with Dijon mustard, salt, pepper, and oil.
- Open the chicken breasts and layer with slices of cooked ham and Emmental cheese. Roll the chicken into a Swiss roll-like shape so that the layers of chicken, ham, and cheese are visible.Secure with toothpicks
- Prepare 3 bowls. Put the beaten eggs in one, the flour in the other, and the bread crumbs in the third. Dust the marinated chicken with flour, dip it in the egg, and coat it thoroughly with the breadcrumbs.
- Heat the oil in a frying pan, coat the chicken with breadcrumbs and fry until golden brown and cooked through.
- Melt the butter in a small nonstick saucepan, add the mashed potatoes, and mix until smooth. Add cream and mix well.Mashed potatoes reach a creamy texture
- For the sauce: Melt the butter in a small saucepan and fry the garlic until golden brown, then add the thyme and stir well.Pour in the cream and Dijon mustard, stir for 1 minute, turn off the heat and stir in the Parmesan until melted.
- To serve, spread a spoonful of mashed potatoes on a plate, then slice the fried chicken and arrange on top of the potatoes.Put dijon mustard sauce on the chicken

Material –
- Lamb – 500 grams
- Peeled garlic pods – 20 g
- Onions – 100 grams
- Carrots – 50 grams
- Leeks – 30 g
- Celery – 30g
- Fresh thyme – 2-3 sprigs
- Fresh rosemary – 1 sprig
- Water/Stock – Enough to completely submerge the lamb chops
- Butter – 50 grams
- Olive oil – 50g
- Red wine – 90ml
For stew:
- Start by chopping the onions, carrots, green onions, and celery.
- Arrange these vegetables in a deep oven-safe dish.
- Add olive oil and garlic to a frying pan and roast in a preheated oven at 220℃ until the vegetables are golden brown.
- Once the vegetables are browned, add the lamb chops, thyme and rosemary to the dish.Pour enough stock to completely cover the lamb chops.
- Reduce oven temperature to 160°C.Cover the dish and simmer until the lamb is cooked through, about 2 hours.
Preparing the sauce:
- Once the lamb is cooked, remove it from the braising liquid and set aside.
- Strain the broth into a pot and simmer until it becomes a sauce.
- Meanwhile, heat an oven container and deglaze with red wine.Add this liquid to the reducing solution
- Once the sauce has reached the desired consistency, season with salt and add the cold butter cubes.The trick to making the sauce shine is blending it.
Bread baking:
- Heat the olive oil and butter in a heavy-bottomed saucepan (preferably cast iron).
- Once the skillet is hot, sear the lamb chops individually on each side until golden brown. Season with salt while cooking.

3. Butter garlic shrimp (1 person)

- Garlic – 15g
- Butter – 30g
- Chili flakes – 2g
- Salt – 2g
- crushed pepper – 1g
- Thyme – a pinch
- Chopped parsley – 2g
Method:
- Heat a nonstick frying pan, melt the butter, and add the garlic.Fry until garlic is cooked
- Add cleaned shrimp and fry with garlic. Be careful not to get the pan too hot and cause the butter to crack.
- Add chili flakes, thyme, and crushed green pepper and stir-fry for 4 to 5 minutes or until shrimp are curled.
- Season the shrimp and add chopped parsley to complete the dish.
- Serve the butter garlic with the baguette slices.
