- Unsalted butter: Use softened butter for easier mixing and a smoother batter. You can also use salted butter in your spritz cookies by simply omitting the additional salt.
- Granulated sugar: It adds sweetness and makes the cookies spread a little bit easier.

Spritz cookies can be a little tricky, so follow these steps to bake them perfectly every time. But believe me, it’s worth it. Buttery, delicious, and festive! Everything you want in a Christmas cookie!
- Preheat the oven and prepare the frying pan: Preheat oven to 400 degrees Fahrenheit and place two cookie sheets in the freezer.
- butter mixture: Add butter, sugar, and salt to the bowl of a stand mixer. Using the paddle attachment, beat until light and fluffy, about 3-4 minutes. Scrape down the sides and bottom of the bowl as needed.
- Add wet ingredients: Add eggs, vanilla and almonds and mix until well mixed. You’ll probably need to scrape the bowl a couple of times to make sure everything is fully included.
- mix flour: Add the flour in 2-3 additions, scraping the bowl as needed, until the flour is completely mixed.
- cookie press: Assemble the cookie press using the desired discs. Fill the press with dough. Place the press flat on a chilled baking sheet and press the cookie press once. Hold for 2-3 seconds before pulling away. If the cookies don’t stick to the baking sheet, use a small silicone spatula to carefully peel the cookies from the press and place them on the baking sheet. As long as you handle it carefully so it doesn’t lose its shape, you can move it if necessary.
- Decorate and bake: Sprinkle with sanding sugar or sprinkles according to your preference. Bake for 7-8 minutes, rotating the pan halfway through baking. Cool completely on a wire rack before serving.

Chilling the dough can sometimes make it more likely to stick to the pan, but for me it didn’t make that much of a difference. Try chilling the dough for 30 to 60 minutes before placing it in the cookie press.

Tips for making the best spritz cookies
Spritz cookies can be a little fickle. Here are some tips for making beautiful cookies.
- Bake as is: No parchment paper, silicone baking mat, or pan spray required. Spritz cookies contain enough butter that they won’t stick to the mold when baked directly.
- Chill: Cold cookie dough sticks well to frozen baking sheets. It’s okay to put the pot in the freezer for more than an hour. It will be much easier to work if the pan is well chilled.
- Don’t use too much dough per cookie: Only press the cookie press once for each cookie! Any more and you’ll have too much dough and the cookies will end up in big clumps. Once clicked, wait a few seconds before lifting the press out of the pan. This will give the dough more time to stick to the mold.
- use a spatula: Even if you follow the above steps, depending on the shape, it may be difficult to stick to the pot. When the molds didn’t stick to the molds, I used a small silicone spatula to gently scrape the cookies off the press and drop them directly onto the molds.
- colored cookies: To make colored cookies, divide a small amount of batter between bowls and mix with a little food coloring until desired color.
- flavor extract: Add a tablespoon or two of lemon or orange zest to the dough to change the taste! You can also dip the baked cookies in chocolate or drizzle them over chocolate.
