This week’s recipe centers around one of our bestsellers: corn.
Mexican street corn, also known as elote, is a popular flavorful street food commonly found in Mexico and is now enjoyed in many parts of the world. Combinations of creamy sauces, cheeses and spices create delicious and iconic dishes.
material:
- 4 ears of fresh, peeled corn
- 1/4 cup mayonnaise
- 1/4 cup sour cream or Mexican crema
- 1/2 cup crushed cotiha cheese (or feta cheese)
- 1 teaspoon chili powder (adjust to taste)
- 1/2 teaspoon paprika
- 1 lime peel and juice
- 1 lime (cut into wedges)
- fresh coriander leaves, chopped
- Moderate amount of salt and black pepper
- Combine mayonnaise, sour cream or crema, chili powder, paprika, lime zest, lime juice, and coriander in a bowl until well combined. Store in refrigerator until ready to eat.
- Place the corn (optionally wrapped in aluminum foil) on the preheated grill and cook, turning occasionally, until the kernels are lightly charred and cooked through (about 8-10 minutes). Removed from heat.
- Using a brush or spoon, spread creamy mixture evenly over grilled corn ears.
- Roll each corn ear in the crushed cotiha cheese and press lightly to ensure the cheese adheres to the creamy sauce.
- Sprinkle with additional seasonings if desired.
- Garnish with chopped coriander leaves.
