- Hot sauce: i use Frank’s hot sauce or crystal hot sauce. I want cayenne pepper to be the main ingredient.
- butter: Be sure to use unsalted butter to avoid adding salt to the recipe.
- White vinegar: It adds a little tangy flavor to the sauce.
- Worcestershire sauce: It gives the sauce a smoky flavor.
- cayenne pepper: The main seasoning to make this buffalo flavor.
- garlic powder: To add flavor.

- macaroni: Use elbow macaroni noodles for classic macaroni and cheese.
- butter: Be sure to use unsalted butter to avoid adding salt to the recipe.
- flour: All-purpose flour is perfect for this and creates a roux that thickens the sauce.
- milk: Any type of milk at 1% or 2% is perfect for this recipe.
- Monterey Jack cheese: This is my favorite cheese to add. It melts perfectly and has a great taste.

- Make buffalo sauce. To make buffalo sauce, add hot sauce, butter, white vinegar, Worcestershire sauce, cayenne pepper, and garlic powder to a medium bowl. Mix well to combine.
- Add chicken and toss to coat. Add the cooked shredded chicken to the bowl of sauce and toss to coat evenly. Let’s set it aside.

- Prepare macaroni noodles. Add the elbow macaroni to a large pot and cook according to package directions. Drain and wash the cooked macaroni and set aside.
- Melt the butter and add the flour to make a roux. Add 1/3 cup butter to a large saucepan over medium heat. Once the butter has melted, add the flour and mix with a whisk.
- Whisk the milk: Slowly pour the milk into the butter mixture, whisking constantly to avoid lumps forming.
- Add cheese, hot sauce, salt and pepper. Add shredded Monterey Jack cheese, cheddar cheese, hot sauce, and salt and pepper. Stir constantly to melt the cheese.
- Add macaroni. Once the cheese has melted, remove the pot from the heat and add the boiled macaroni and stir. Stir well to coat the noodles evenly.
- Add buffalo chicken and mix. Gently stir in buffalo chicken until thoroughly mixed.
- Garnish and serve: Garnish with additional sauce and green onion slices. Enjoy warm!

Do not use prepackaged shredded cheese. This type of cheese has a coating that prevents it from sticking to the bag it comes in. This prevents it from melting like shredded cheese from a block. For a creamier, smoother texture, grate the cheese yourself.
