Bring a large pot of salted water to a boil over high heat. Use a paring knife to remove the hard core from the bottom of each cauliflower. Add the cauliflower, one at a time, to the boiling water and cook for 5 minutes. Remove and set aside to cool. (Alternatively, cut the cauliflower into large florets, cook for 3 minutes, spread out and let cool.)
