You’ll love this recipe! Super easy to make, these delicious coffee-flavored cookies are packed with gooey chocolate chunks in every bite, giving you an irresistible, amazing mocha taste. A simple coffee drizzle makes these beautiful cookies feel even more special.
Bake now for unexpected Christmas cookies. But don’t save this recipe just for the holidays. These cookies are great any time of the year. Regardless of the season, I love pairing it with tea or coffee for a special flavor.

This recipe uses basic ingredients that can be found at any store. Here’s what you need:
- coffee – Use instant coffee to flavor cookies and drizzles. nescafe is popular and easy to find, but any type will do.i used Cafe Ricoa Puerto Rican brand. espresso powder also works well.
- chocolate – These cookies are studded with chocolate chunks. We recommend using dark chocolate (semisweet or bittersweet), which enhances the flavor of the coffee. Ghirardelli 60% cacao bittersweet chocolate.
- flour ・The dough uses all-purpose flour.
- butter – You will need unsalted butter to make the dough.
- brown sugar ・A cookie that uses brown sugar to enhance the sweet flavor of coffee.
- vanilla – You’ll need some vanilla extract.
- salt – Recommended to use kosher salt For this recipe.
- drizzle – A simple glaze/drizzle is made with a generous amount of instant coffee, powdered sugar, vanilla extract, and a little water.

To prepare the dough, you will need measuring cups and spoons, and stand mixer. A hand mixer can be used in a pinch, but you may need to mix the flour and chocolate by hand.You will also need a few baking sheets (these are sheet pan is my favorite! ), it is recommended to line the pot. Cooking Sheet.To make the glaze/drizzle, use a small bowl and Piping bag with a small round mouth or decorative light bulbs (My favorite because it’s reusable and easy to work with). If you don’t have either, use a small zip-top bag or a spoon with the corner cut off.

how to make coffee cookies
These delicious coffee flavored cookies couldn’t be easier to make. A detailed recipe card is below, but here’s a quick overview of the steps:
- Make the dough. First, mix instant coffee with 1 teaspoon of hot water (tap water is fine) and stir until dissolved. Next, cream the butter, sugar, and salt until light and fluffy. Mix coffee mixture and vanilla extract. Add the flour in two parts. Once mixed, add the chocolate chunks and mix.
- Shape and bake the cookies. Roll a level tablespoon of dough into a ball and use your fingers to flatten it slightly. Bake the cookies until the bottoms are lightly browned.
- Get ready to drizzle. In a small bowl, combine powdered sugar, instant coffee, vanilla extract, and water. Mix until smooth. When finished, it should have a thick but drizzle-like consistency. If it’s too thin, add more powdered sugar. If it’s too thick, add water 1-2 drops at a time.
- Decorate the cookies. Transfer the glaze to a piping bag or a decorative bulb fitted with a small round tip (you can also use a back zipper top with the corner cut off). Drizzle over cookies.

If you want to give it a try, here are some easy ways to modify coffee chocolate cookies.
- chocolate – Replace dark chocolate chunks with milk chocolate or chocolate chips. You can also use a 4 oz (113.5 g) chocolate bar if you want more chocolate flavor.
- no chocolate – What if we run out of chocolate? Feel free to skip the chunks for a more straight-forward coffee flavor.
- drizzle – Instead of coffee drizzle, try adding melted chocolate or salted caramel drizzle. If you use caramel, be aware that the caramel won’t set, so the cookies will be a little sticky (sticky, but delicious).
- nuts – For added texture and flavor, stir in half a cup of your favorite nuts, such as chopped walnuts, pecans, or pistachios.
- spices – You can also try adding different spices. You may want to add warm spices to your coffee, such as cinnamon, cardamom, or nutmeg.

These easy coffee flavored cookies are a delicious treat you won’t be able to resist.

For cookies:
- 1 tablespoon Instant coffee (or espresso)
- 1 cup Unsalted butter, at room temperature
- 1/2 cup packed brown sugar (light or dark)
- 1/2 tea spoon kosher salt
- 1 tea spoon vanilla extract
- 2 cup all purpose flour
- 1/2 cup chopped dark chocolate (about 3oz/85g)
For drizzle:
- 2 teaspoon Instant coffee (or espresso)
- 1/2 tea spoon vanilla extract
- 1 1/4 cup icing sugar
Instructions
Prepare the cookies:
Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper (or lightly grease or spray with nonstick cooking spray).
In a small bowl, mix 1 tablespoon of instant coffee and 1 teaspoon of hot water (or tap water). Stir until the coffee is completely dissolved. Let’s set it aside.
Using a stand mixer, cream together the butter, brown sugar, and salt until light and fluffy.
Stir the instant coffee and water mixture and vanilla extract into the butter mixture.
Add the flour to the butter mixture in two additions.
Mix the chopped chocolate into the batter thoroughly.
Roll a level tablespoon of dough into a ball and use your fingers to flatten it to about 1/2 inch thick. Repeat with remaining dough, placing cookies on baking sheets about 1 inch apart.
Bake cookies until bottoms are lightly browned, about 10 to 12 minutes. Let cool on the baking sheet for 5 minutes, then transfer to a baking rack to cool completely before decorating.
Preparing for drizzle:
In a medium bowl, combine 2 teaspoons instant coffee, vanilla extract, and 5 1/2 teaspoons water until coffee forms. Stir until the instant coffee is dissolved.
Add powdered sugar and mix until smooth.
Return the cookies to the parchment paper-lined baking sheet (or place a lined rack over the baking sheet). Use a decorating bulb, spoon, piping bag, or zip-top bag with the corner cut off to drizzle the glaze over the cookies.
Once the glaze has set, transfer the cookies to an airtight container for storage. enjoy!
Note
To measure the flour, lightly spoon it into a dry measuring cup and use a knife (or one with a straight edge) to level the top. Don’t fill the measuring cup with flour…you’ll end up crowding it with flour and the cookies will be dry.
When mixing cookie ingredients, be sure to stop every now and then to scrape down the mixer bowl and stir with a spatula.
Before decorating the cookies, try drizzling them on a cookie sheet. You should be able to hold your line even in drizzle. If it’s too thin, add more powdered sugar. If it’s too thick, add 1-2 drops of water to dilute it. You should be able to drizzle about 2 batches of cookies.
