Perhaps the most well-known potatoes come from the San Luis Valley, home to many potato farmers who grow more than 70 varieties of potatoes. Potato, or Solanum tuberosum, is a plant in the Solanaceae family (Solanaceae). It is related to peppers, tomatoes, and eggplants, but it is adapted to high altitudes and can grow in harsher growing conditions. It is native to the Andes region of South America and was introduced to Europe and then North America centuries ago. Potatoes are a good source of vitamin C, potassium, vitamin B6, fiber, and are naturally fat-free (for more information, see Colorado State University Extension).
More than 70 varieties of potatoes are grown in Colorado, from well-known varieties like Russet and Yukon Gold to specialty varieties like Purple Majesty and French Fingerling. The state produces more than 2 billion pounds of potatoes annually, making Colorado his fifth largest potato producing region in the United States.

Preparation time: 1 hour

material:
1 1/2 cups full fat mayonnaise
2 tablespoons apple cider vinegar
2 tablespoons spicy brown mustard
1 tablespoon of your favorite flavorful barbecue rub
1/2 tablespoon black pepper (ground)
4 tablespoons buffalo sauce or your favorite hot sauce
1 tablespoon hot honey
2 pounds purple potatoes, cooked until fork-tender, cooled and cut into wedges
1/2 cup chopped red onion
1/2 cup blue cheese crumble
green onions for decoration
Cooking method
Boil the potatoes until fork-tender.
Drain and cover with cold water until potatoes are cool.
Drain completely and place the potatoes in the refrigerator until completely cool.
While the potatoes are cooling, mix all the dressing ingredients in a bowl and store in the refrigerator.
Once the potatoes have cooled, cut them into wedges or halves depending on the size of the potatoes.
Place the potatoes in a large mixing bowl.
Add blue cheese crumbles and diced red onion.
Add the dressing (as light or heavy as you like).
Mix well to combine.
Garnish with green onions and top with buffalo sauce.
