Cowboy’s Breakfast Casserole is a hearty dish filled with breakfast favorites (eggs, bacon, sausage, beans, cheese, potatoes, and more) and super easy to make. Just put all the ingredients in a baking dish, pour the beaten egg on top, and bake in the oven. Delicious breakfast with the simplest preparation.

If you prepare the casserole the night before and store it in the refrigerator, all you have to do is pop it in the oven the next morning. Perfect for Christmas breakfast or potluck.

Chopped bacon, bell peppers, crumbled breakfast sausage, and pinto beans, just to name a few. Tender and perfectly baked with a cheesy egg mixture. This breakfast casserole is guaranteed to be eaten in no time, so be sure to slice it up and have him eat a piece or two. Luckily, this is all you need to keep you full until lunch (or dinner).
Materials needed
This is all I added to the casserole, but feel free to mix and match. Cowboy’s Breakfast Casserole is a great way to use up whatever you have in your fridge. See recipe card below for exact measurements.

How to make Cowboy’s Breakfast Casserole
Cowboy Breakfast Casserole is super easy to make. Just follow a few simple steps and then pop it in the oven. Not only is it easy to make, but it also feeds a crowd, making it perfect for a holiday breakfast.
- Preheat the oven and prepare the bread. Preheat oven to 350 degrees F and spray a 9×13 baking dish with bread spray.
- Combine ingredients: Add bacon, sausage, onion, bell pepper, pinto beans, and cheese to large bowl and stir. Then pour into the prepared baking dish.
- Add eggs and potatoes. In the same bowl, combine eggs, milk, salt, and pepper. Pour the mixture into a baking dish. Then scatter the potatoes evenly on top.
- bake: Bake for 35-45 minutes until the edges are set and brown, but the center is still a little jiggly. Then let the casserole stand for 5 minutes. Serve with salsa, sour cream, and jalapeños.

Cowboy’s Breakfast Casserole is super easy to customize. Here are some ideas to get you started, but you can add anything you want. Add all your favorite omelettes or scrambled mix-ins.
- Using other beans: If you prefer another bean, replace the pinto beans with whatever you like in the same size, or with a can you have on hand.
- Frozen vegetables: To speed up prep time, use 2 cups frozen diced peppers and onions.
- Let’s make it spicy: Give your casserole a little kick by adding a diced jalapeño or two or canned diced green chiles.
- Uses of hash browns: If you want to use shredded hash browns instead of diced potatoes, mix them in as you whisk the other ingredients instead of scattering them on top.
- Meat options: If you want to use only bacon or only sausage, use 1 pound of the meat of your choice and omit the other meats. For a vegetarian option, omit the meat entirely. Add sautéed mushrooms if you like!

Preserving and making leftovers

You absolutely can! Prepare step 2 the night before. Cover with plastic wrap or foil and place in the refrigerator. In the morning, continue with step 3 and bake as directed.
