Arroz con pollo (rice with chicken in Spanish) is a classic Hispanic dish that can be dressed up or down for an easy one-pan dinner the whole family will love. Simple yet flavorful, easy yet comforting.This Dominican style arroz con pollo, or Lurio de Polois the perfect family recipe for those busy nights when you don’t want to spend hours on a hot stove and want a recipe you’re sure the kids will eat.
This recipe calls for Dominican oregano, but if you can’t find it, regular oregano will work too. You’ll also need culantro, a stronger version of cilantro, but it’s hard to find in grocery stores, so you can easily substitute it with cilantro or omit it entirely.

Dominican style arroz con pollo

material:
- 1 1/2 pounds chicken
- 1/2 onion (small)
- Green pepper 1/3
- 1 tablespoon sazon azafran (saffron)
- 1/4 teaspoon black pepper
- 2 tablespoons sopita or chicken bouillon powder
- 1/2 teaspoon oregano
- 3 cloves minced garlic
- 1/2 lime
- 1 tablespoon tomato paste
- olive
- Recao or culantro
- 3 cups of rice
- 1/4 cup water
- 3 cups of water
- Olive oil, 2-3 tablespoons
Instructions:
- Marinate the chicken with finely chopped onions, pepper, garlic, chicken bouillon powder, lime juice, sazon, Dominican oregano (or regular), and a little olive oil. Marinate the chicken for 1-2 hours.
- Fry the chicken in a pot until it is about 3/4 cooked through.
- Add about 1/4 cup water to the marinade bowl and add to the chicken in the skillet.
- Add tomato paste and stir until well mixed.
- Once the chicken is boiling, add the rice to the pot and stir.
- Add 3 cups of water to the chicken and rice and simmer until most of the water evaporates.
- Add the culantro or cilantro, cover the pot, reduce the heat to the lowest setting, and cook for 25 to 30 minutes.
