Peel the banana skin from 2 to 3 half-cooked bananas.
1 tablespoon oil (vegetable oil, olive oil, or your favorite cooking oil)
1 teaspoon mustard seeds
1 teaspoon urad dal (broken black gram)
1 teaspoon chana dal (split chickpeas)
1-2 green chillies (chopped)
1/2 teaspoon turmeric powder
1 teaspoon sambar powder or curry powder
Salty to your liking
Fresh coriander leaves for garnish (optional)

Wash banana peels thoroughly
Trim the ends and hard fibers
Cut the skin into thin bite-sized pieces
Heat oil in a frying pan over medium heat,
add mustard seeds
Once it starts spluttering, add urad dal and chana dal
fry until golden brown
Add chopped green chilies and fry for 1 minute
Add the sliced banana peels to the frying pan and mix well.
Add turmeric powder, sambar powder (or curry powder) and salt and mix.
Mix thoroughly.
Cover the pot and simmer over medium-low heat for 10-15 minutes, stirring occasionally.
Garnish with fresh coriander leaves, if desired
