While the cake is baking, clean out your mixing bowl and make the buttercream. Add the butter to the bowl and beat on medium speed until smooth, stopping the mixer occasionally to scrape the bottom and sides of the bowl. Add the powdered sugar, cocoa powder, sour cream, milk, vanilla extract, and salt. Beat on low speed until the sugar and cocoa are moistened, then increase speed to medium speed and beat for about 5 minutes until smooth and fluffy. Add a little more milk (1 teaspoon at a time) as needed to make a smooth, light buttercream. Scrape the bowl occasionally to make sure the buttercream is evenly mixed. Taste and add a little more salt if needed. (You can set the buttercream at room temperature until the cake is baked and cooled.)
