Navrattan Kebab is a delicious and flavorful vegetarian dish perfect for any occasion. This dish is a combination of nine types of vegetables and is named ‘Navrattan’ (meaning nine jewels). Vegetables are mixed with spices, paneer (cottage cheese) and nuts into kebabs and baked to perfection. These kebabs are served with a sweet and tangy aam papad (dried mango) chutney that complements the spicy flavor of the kebabs. 1. Navrattan Kebab with Aam Papad Chutney

material:
For kebabs:
· 100 grams of boiled and mashed potatoes.
・Grated paneer (cottage cheese) 50g
・25 grams of grated carrots.
· 25 grams grated cauliflower.
・25 grams of grated cabbage.
・25g chopped chili peppers
・25g of chopped onions.
· 25 grams of grated boiled beets.
· 25 grams grated boiled sweet corn.
・25g chopped cashew nuts.
・25g chopped almonds.
・25g chopped raisins.
· 25 g of ginger-garlic paste.
・Cumin powder 2g
・2g coriander powder
・Garam masala 2g
・Red chili powder 2g
・Salt (appropriate amount)
・2 tablespoons oil for shallow frying
For chutney:
・Dried mango (arm papad) 100g
・tamarind pulp 25g
・Jaggery 25 grams
・Ginger paste 5g
・Cumin powder 1g
・Red chili powder 1g
・Salt (appropriate amount)
· Water as needed.
Instructions:
1. To make the kebabs, place all the mashed potatoes, grated paneer, and grated vegetables in a mixing bowl.
2. Add chopped nuts and raisins, ginger garlic paste, cumin powder, coriander powder, garam masala, red chili powder and salt. Mix all ingredients well.
3. Grease your hands with oil and shape the mixture into small round kebabs.
4. Heat the oil in a frying pan or grill pan over medium heat. Place the kebabs in a frying pan and fry until golden brown on both sides.
5. To make the chutney, soak dry mango (aam papad) in water for 10 minutes.
6. Blend the soaked mangoes in a blender with tamarind pulp, jaggery, ginger paste, cumin powder, red chili powder, salt and a little water to make a smooth chutney.
7. Serve the warm Navrattan Kebabs with Aam Papad Chutney. enjoy!
