The humble lentil is a powerhouse of nutrition, rich in protein, iron, fiber, magnesium, and folate. No wonder they’re the stars of Fakes, a comforting Greek lentil soup perfect for Lent or anyone looking for a simple, flavorful vegan meal.
Makes 6 soup bowls

– 250 grams brown lentils
– 8 cups water
– 1 x chopped red onion
– 2 cloves of finely chopped garlic
– 1 carrot, peeled and grated
– 2 finely chopped celery sticks
– 1/4 cup finely chopped parsley
– 1 bay leaf
– 3 grated tomatoes
– 1/4 cup olive oil
– salt and pepper to taste
– 1 tablespoon vinegar (optional)
Method
– Wash the lentils thoroughly, put them in a pot of water and bring to a boil.
– Drain the lentils and set aside.
– Finely chop the celery, onion, parsley and garlic.
– Grate the tomatoes and carrots.
– Place a saucepan over medium heat and add the water, lentils, tomatoes, celery, carrots, garlic, and bay leaves. Stir with a wooden spoon and simmer, covered, for about 25 minutes.
– Pour in olive oil, salt, pepper and vinegar (optional). Stir again and simmer, covered, over medium heat for another 40 minutes or until thickened.
