■ 4 ounces crumbled blue cheese (add more for garnish)
■ 2 cloves of fresh garlic (chopped)
■ 1/2 lemon juice
■1 tablespoon white wine vinegar
■1/2 red onion (thinly sliced)
■6 pieces of thick-sliced bacon baked to a crispy texture
■ 1 teaspoon fresh chives (optional)
■ Sea salt and freshly ground pepper to taste

■ In a mixing bowl, combine yogurt, blue cheese, garlic, lemon juice, and vinegar.
■ Stir the ingredients to combine.
■Taste the dressing and adjust the taste with salt and pepper.
■ Store the dressing in the refrigerator until ready to use.
■ Place the arugula evenly on each plate.
■ Sprinkle the sliced tomatoes with salt and pepper.
■ Layer tomato slices, red onion, and bacon lengthwise until all tomato slices are used.
■ Be sure to save one slice of bacon to top the salad.
■ Add desired amount of dressing to each tomato stacker salad.
■ Garnish with additional blue cheese crumbles, crispy bacon, and chives on top.
