The joy of preparing halo-halo, a sweet, icy, creamy and colorful Filipino dessert, may only be surpassed by the joy of eating it. The name means “to mix” in Tagalog and refers to the best way to eat it, by digging from the bottom up with a tall spoon to mix everything together. Shaved ice, evaporated milk mixed with sweetened condensed milk or coconut milk are the basis of this dessert. Everything else is up to personal preference. Generally, halo-halo includes a mix of beans, corn, coconut gel, tapioca pearls, jackfruit, mango, and banana soaked in syrup. As a starting point, you can use a bottled Halo-Halo His mix (see tips). Prepare all the ingredients so that the ice cubes do not melt when you add them to the glass. If you’re having a large gathering, set up a toppings bar and let attendees make their own.
