- 1 onion
- 2 teaspoons rogan josh curry paste
- Paneer cheese 100g
- Baby spinach 200g
Method
- First, place a large nonstick frying pan over medium heat and toast the cashews, shaking the pan occasionally until they are lightly golden brown.
- Add the cashews to the pestle and mortar and return the pot to the heat.
- Finely chop the onion and add 1 tablespoon of olive oil and curry paste to a hot frying pan.
- Simmer for 8 minutes, stir, then add 1 tablespoon of red wine vinegar. Boil the vinegar for 30 seconds. Next add diced paneer followed by spinach.
- Stir until the spinach is wilted and all the liquid has evaporated, then taste and season perfectly with sea salt and black pepper.
