How to make loco moco
1. Season the ground beef: In a large bowl, combine ground beef, soy sauce, parsley, garlic powder, onion powder, Worcestershire sauce, black pepper, and salt. Mix well. Divide mixture into 4 equally sized patties, about 1/2 inch thick.
Tip: For best results, use: 80/20 ground beef Or 80% lean ground beef and 20% beef fat.
2. cook a hamburger: Put a little butter and olive oil in a large frying pan over medium heat. Once the butter has melted and the skillet is hot, add the beef patties and cook for 4-5 minutes on each side. or until cooked to desired doneness.. Remove the patties from the pan and set aside.
3. caramelize onions and mushrooms: For the best umami-flavored gravy, sauté onions with a little more butter and olive oil in the same skillet you used to cook the burgers. Once the onions are slightly soft, add the mushrooms and cook for at least 10-15 minutes, or long enough to caramelize slightly. Finally, add the minced garlic and fry until fragrant.
Four. Mix the ingredients for the soup stock: In a large measuring cup or bowl, combine beef broth, soy sauce, cornstarch, Worcestershire sauce, and black pepper. Cornstarch is what thickens the gravy.
Five. Combine soup and vegetables: Pour the soup over the onions and mushrooms and mix well. Bring to a gentle simmer and simmer until the gravy thickens.
6. fry the eggs: Heat a small amount of olive oil (or butter) in a new frying pan over medium heat, crack in the two eggs, and season with salt and pepper. Fry the eggs without moving them for 4 to 5 minutes, or until the whites are cooked but the yellows are still runny.
7. serve: Place a spoonful of cooked rice on a plate, then top with a spoonful of gravy, a burger patty, and a fried egg. Garnish with chopped fresh green onions, if desired.
storage and leftovers
- storage: For best results, be sure to save each component separately. Rice, burger patties, and eggs can be stored together, but gravy is best stored in its own airtight container. It can be stored in the refrigerator for 3-4 days.
- frozen: Loco moco can be frozen for 1 to 2 months. Freezing eggs is not recommended. It is recommended to fry new eggs immediately before eating.
- Reheating: Thaw frozen leftovers in the refrigerator overnight before reheating. Reheat in the microwave for 1-2 minutes or until heated through.
Leftover loco moco makes really great fried rice. Reheat the rice in a large skillet over medium heat and break up the beef patties until cooked through. Push the rice and beef to one side of the pot and use the other half of the pot to scramble some eggs. Once the eggs are cooked, mix them into the rice.
