Mexican Moretes Recipe
Originating in Mexico City, these are delicious variations of the Spanish mulletto. This recipe is the traditional Mexican version. Some regions add different things to the sandwich, but it’s usually very simple with butter-toasted bollillo, refried beans, and Oaxacan cheese. Normally, it is just topped with pico de gallo, but it is also delicious with additional toppings.
The great thing about mullet is that you can customize it to your liking, so try adding a dash of your favorite salsa, guacamole, or chopped bell peppers for spiciness. I love topping my mullet with pico, sliced avocado for added creaminess, and jalapenos for an accent of spice. The flavor of beans and Oaxacan cheese is the perfect match!

There are no leftovers in this sandwich! Mollettes are best eaten right out of the oven. It does not keep well, so it is not recommended to store it, but if you try it anyway, you will not be left with anything.
