So every year I make a batch of these Peppermint Chocolate Crunch Cookies. And anyone who tries it asks me for the recipe.
Here’s how to make it at home.
Get all the ingredients.
These cookies require:
1/2 cup (1 stick) softened unsalted butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1 teaspoon pure peppermint extract
1 1/3 cups flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1/3 cup oats.
4 ounces of good baking chocolate
14 mini or 4 regular size peppermint candy canes.
Before you start making the dough, chop the chocolate and break up the candy canes on a cutting board.
If you prefer, you can crush round peppermint candies instead.
First, cream the softened butter and sugar.
To make these cookies, preheat the oven to 350 degrees Fahrenheit. Combine flour, baking soda, baking powder, and salt in a small bowl and set aside.
In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl fitted with a hand mixer, cream together the butter and sugar until the mixture is well combined and fluffy.
Next, add the eggs and peppermint extract and mix.
Add dry ingredients to complete the dough.
Gradually fold flour mixture into wet ingredients until cookie dough comes together.
Next, mix the oats into the cookie dough.
Stir in chocolate and crushed peppermint.
To finish the batter, mix the chopped chocolate and crushed candy canes together.
Line a cookie sheet with parchment paper to prevent the cookies from sticking while baking.
If you don’t have a parchment paper, lightly spray the sheet with cooking spray.
Use a tablespoon-sized cookie scoop to scoop out balls of dough. Roll enough balls until smooth, flatten slightly, and place on the prepared baking sheet.

Bake until the edges of the cookies begin to turn golden.
Arrange 12 pieces of dough evenly on a cookie sheet and place in the oven. Bake for 10-12 minutes until the edges of the cookies are golden brown.
Remove the cookies from the oven and let them sit on a hot baking sheet over the oven for 5 minutes, then transfer to a wire rack to cool completely.
This creates a nice chewy center.
