Salt is one of the essential ingredients in the kitchen and can make everything taste good or bad depending on how much you use it. Now, as foodies, we have many different salt variations to choose from. There is regular fine-grain table salt used in everyday cooking and special black salt known for its tangy flavor. Chef Saransh Goila has just created ‘Hala Namak” or green garlic salt, which he claims is his “favorite thing to use on top of everything.”
In the video, Chef Saransh demonstrated the simple process of making this unique salt. Ingredients include green garlic, coriander leaves, cumin seeds, ginger, and green chillies. The chef blended these ingredients in a blender without adding water. Next, he recommended transferring the paste to a bowl, adding salt and dehydrating it at 100 degrees Celsius for an hour. The chef suggested using an air fryer for this step. This dehydration process is intended to remove moisture and enhance flavor. The mixture was then ground into fine salt using a pestle and mortar. This homemade creation is ready to be sprinkled on a variety of dishes or used as a seasoning.

Saransh Goila took inspiration from the works of Uttarakhand. Pishun Rune, known for its colorful and flavorful salt made in Garhwal and its neighboring areas. A favorite choice, especially in mountainous regions, it is traditionally made by combining rock salt with fresh herbs and spices. Silvatta (stone crusher). The chef says, “It’s very easy to make, just dry it in the sun or in the oven at the lowest temperature for 60 minutes. Do not add water during grinding.”
