■ 1 lb Florida crab meat (drained and shell pieces removed)
■ 1 large Florida tomato (sliced)
■ Bake 4 eggs in a frying pan
■ 1/4 cup red onion, chopped
■ 2 tablespoons chopped fresh parsley
■ 3 tbsp light mayonnaise
2 tbsp Dijon mustard
Seafood seasoning 3/4 teaspoon
1/2 tsp Worcestershire sauce
■ 2 egg whites, beat lightly
■ Bread crumbs 1 1/2 cups (divided)
2 tbsp olive oil

■ 3 eggs, separate the yolks
1/4 teaspoon Dijon mustard
■ 1/2 lemon (squeezed juice)
■ Hot pepper sauce, as desired
■ 1 melted unsalted butter
■ Sea salt as desired
Preparation

■ Combine red onion, parsley, mayonnaise, mustard, seafood seasoning, Worcestershire sauce, and egg whites in a medium bowl. Gently stir in crabmeat and 3/4 cup bread crumbs.
■ Cover and chill for 30 minutes. Form crab mixture into 8 patties about 3/4-inch thick. Roll patties with remaining 3/4 cup bread crumbs in a shallow dish to coat evenly.
■ Heat the oil in a nonstick frying pan over medium heat and cook 4 crab cakes for 7 minutes on each side until golden brown on both sides.

■ Add a few dashes of mustard, lemon juice, egg yolks, and hot pepper sauce to a blender or food processor. Mix the ingredients and slowly add the melted butter until the ingredients thicken.
■ Taste the hollandaise sauce and adjust the seasoning with salt and hot pepper sauce. Serve the sauce immediately.
■ To assemble the Florida Blue Crab Cake Benedict, place 1 or 2 tomato slices on each plate. Season the tomatoes lightly with salt and pepper. Place a fried egg on top of each tomato slice.
■ Place the crab cakes on top of the fried eggs. Spread Hollandaise sauce evenly over each crab cake and serve immediately.
