Albondigas Sliders and Jalapeno Aioli
Albondigas, which means meatball in Spanish, is usually served in the Mexican meatball soup of the same name. Chef Aaron Sanchez takes meatballs out of traditional cooking and creates sliders by sandwiching them between small hamburger buns. He adds roasted poblanos, chipotle pepper sauce, cotija cheese, garlic to the meat mix, and his homemade seasoning, jalapeño aioli, to add bold flavor to the recipe.
