With its fiery, gorgeous red hue and punch of flavor, this stew is truly special.
The shrimp and chorizo bring out their delicate and lively aromas, while the tomato and green pepper sauce adds richness and acidity.
I love fennel. Its sweet, grassy taste pairs particularly well with seafood.
This is one of those dishes that you can carry through the seasons. It’s hot and smoky in the winter, but still fresh and vibrant enough for the warmer months.

Serves 2-3 people
- 1 onion (thinly sliced)
- 4 cloves garlic (large)
- 75g Spanish chorizo (cut in half and thinly sliced)
- 1 fennel bulb (200g), thinly sliced.
- 1 red bell pepper (core removed and thinly sliced)
- 1 tablespoon smoked paprika
- 2 teaspoons coriander
- 1/2 teaspoon cumin seeds
- 1 tablespoon tomato paste
- 2 cups vegetable stock
- 400g canned tomatoes
- 250g shelled shrimp
- 1 tablespoon packed fennel fronds
- Peel and juice of 1 lemon
- 1 teaspoon salt
Method
- Heat 2 tablespoons of olive oil in a large pot over medium heat. Add onion and garlic and cook, stirring frequently, until lightly browned, 4 to 5 minutes.
- Add the chorizo, fennel and capsicum, followed by the smoked paprika, coriander and cumin seeds. Stir to combine, then cook for another 5 minutes, stirring frequently, until the chorizo is lightly browned and the spices are fragrant.
- Add the tomato paste and stir, then add the vegetable stock and tomatoes. Cover, reduce heat to medium-low, and simmer for 25 minutes.
- Add shrimp, fennel leaves, lemon juice and zest, and salt. Simmer for an additional 3 minutes, until shrimp is white and cooked through.
- Enjoy warm with bread or rice if you like.
