shrimp tempura
Shrimp tempura is a delicious dish of shrimp coated in a crisp batter. First, peel the shrimp and clean them, leaving the tails. (This makes each piece easier to hold and soak.) Next, mix the flour, cornstarch, cold water, club soda, and eggs to form a dough. It may get lumpy, but that’s okay. Shrimp are dipped into this dough and fried in hot vegetable oil until golden and crisp. You can enjoy the exquisite combination of shrimp that are crispy on the outside and juicy on the inside. Believe me, you will love it! I can’t get enough of the light and crispy batter!
Shrimp tempura has no peculiarities, so please enjoy it with your favorite sauce. I like to spice it up with sriracha mayonnaise or sweet chili sauce. No matter what you serve your shrimp with, one thing is certain. You’ll jump off the table! Even if you’re not usually a fan of shrimp, reading this will make you fall in love with shrimp.
materials needed
The great thing about this shrimp tempura recipe is that the ingredients are very simple. You probably have most of the ingredients in your pantry right now. (Check the recipe card below for exact dimensions.)
- big shrimp: The star of the show, peel and devein but leave the tail on.
- all purpose flour: It is mixed with cornstarch to make the base of the dough, and when it is fried, it has a light and crispy texture.
- cornstarch: Like wheat flour, cornstarch helps crunch the dough and contributes to the dish’s characteristic crispness.
- cold water: Helps to make a cold batter, and the hot oil makes the tempura crispy.
- soda water: Carbonic acid gives soft texture to give light and delicate shell.
- egg: Helps all ingredients adhere.
- Vegetable oil: When used in deep frying, the prawns are cooked quickly and evenly, and the outside becomes golden brown and crispy.
- Sriracha Mayonnaise or Sweet Chili Sauce: These tangy sauces add even more flavor and a spicy kick, complementing crispy shrimp with a tangy-spicy contrast. Use your favorite dipping sauce.

tips and tricks
Making shrimp tempura takes a little practice, so don’t worry if it doesn’t look perfect the first time. With these tips and a little patience, you’ll have crispy shrimp tempura in no time. Everyone will want one.
- Chill dough ingredients: Make sure the water, club soda and eggs are all cold before mixing the dough. Using a cold batter allows for a crisper batter when fried.
- hot oil is the key: Heat the oil to a suitable temperature, approximately 350-375 degrees (175-190°C). This will cook the shrimp quickly and prevent it from becoming oily or sticky.
- To keep shrimp from curling up while frying: Make a small incision inside the shrimp. There are about 5 notches in one shrimp.
- try the dipping sauce: Try different dipping sauces such as seafood, ponzu sauce, yum yum sauce and more to find your favorite pairing with plump shrimp.

store leftovers
Shrimp tempura is crispy and best eaten right away, but leftover tempura can be stored well by following these tips.
- in the fridge: Leftover shrimp tempura can be stored in an airtight container in the refrigerator for 2 days. Use a single layer or separate layers with parchment paper to keep the pieces from sticking together.
- reheat in the oven: When you’re ready to enjoy your leftovers, preheat your oven to about 350 degrees Fahrenheit. Place the tempura in one layer on the baking sheet and heat for a few minutes until warm and crisp. Avoid reheating in the microwave as this will make the shrimp sticky.
