Recipe of the week: Avocado slaw
material:
- 1/2 white cabbage, chopped
- 4 handfuls of kale (shaved)
- 1 cup purple cabbage (chopped)
- 2 avocados
- 1 carrot (peeled)
- 1 lemon (squeezed juice)
- 1 lime (with juice)
- 2-3 tablespoons agave (optional)
- 2-3 tablespoons rice vinegar (optional)
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon celery salt
- salt and pepper to taste)
Instructions:

Peel the avocado and place in a large bowl.
Step 2
Add a squeeze of lemon and lime, agave and rice vinegar to taste, smoked paprika, celery salt, and a pinch of salt and pepper. Whisk all ingredients together.
Step 3
In the same bowl, add all of the white cabbage, half of the shaved kale, and 1 shaved carrot.
Step 4
Mix and massage the ingredients with your hands. Next, add the remaining kale and purple cabbage. Mix thoroughly.
Step 5
Add purple cabbage if you like!
Expert tips:
If you want to add a little more sweetness to your coleslaw, Levi’s® Stadium Executive Chef Alvin Cabiring recommends adding a few tablespoons of agave to the mix.
