I prefer to use shredded cooked chicken breast for this dip, but you can also use shredded rotisserie chicken if you prefer. You can use any buffalo sauce you like, but we love frank sauce. When it comes to cheese, we’re big fans of the combination of sharp cheddar and blue cheese, but feel free to experiment with other combinations as well. How to make the best buffalo chicken dip:
— Cut the chicken into strips. During the tasting, most people agreed that they wanted shredded chicken in their dip instead of chunks of chicken. But I also found that sometimes the shredded chicken was too long, making it difficult to scoop out the perfect bite. Coarsely chopping your chicken strips eliminates that problem and ensures you get the perfect texture and scoopable size chicken.
— Mix in stages. Most recipes involve mixing all the dip ingredients in a bowl. But trying to combine cream cheese, buffalo wing sauce, and shredded chicken that isn’t soft enough at the same time is a guaranteed disaster. It’s much easier (and less messy) to assemble if you just stir together the cream cheese, buffalo sauce, and blue cheese dressing until smooth, then add the shredded chicken and cheese.
— Add salt to the dip if desired. Since it’s loaded with cheese and buffalo sauce, most people would think there’s no need to actually add salt to this dip. However, during testing, I found that without mixing in a little kosher salt, the dips often taste monotonous. I’ve found that 1/2 teaspoon is the best amount, but since salt levels in prepared dressings and sauces can vary (as well as personal preference), start with 1/4 teaspoon salt. We recommend adding salt, then tasting and adding more salt if necessary. before spreading into a casserole dish.
