But Guerrier’s Haitian macaroni and her rendition of cheese is so beloved that all of her clients specifically request it. Caitlyn Jenner loves Guerrier so much that one bite convinced her to hire him on the spot.
If you’ve never had macaroni gratin before, buckle up. The craft will fly out of the water.This comforting food benefits from green peppers, plenty of seasoning, and bacon and sausage. And the best part? There’s no need to go to the trouble of making homemade béchamel (Guerrier’s store-bought shortcuts may surprise you).

Gouda (not smoked), finely chopped

4 types of cheese shredded blend
- 2 c.
mexican blend shredded cheese
- Four
(1.4 oz) Packet Sazon Goya Con Achiote
- 1 tablespoon.
creole seasoning
- 2 1 teaspoon
Worcestershire sauce
- 1 1 teaspoon
tomato paste
- 1 1/2 1 teaspoon
adobo powder
- 1 1/2 1 teaspoon
garlic powder
- 1 1/2 1 teaspoon
garlic salt
- 1/2
(12 oz) can of evaporated milk
- 1/2 c.
light mayonnaise
Hot sauce, for drizzling
- 1/2
Green bell pepper, remove seeds and membranes and finely chop
- 1/2
Remove seeds and stems from red pepper and chop finely
- 1/2
Yellow bell pepper, remove seeds and membranes and finely chop
- 1/2
(14 oz) package of Polska Kielbasa, chopped
- 1 c.
Grated store-bought Parmesan cheese

- step 1Preheat oven to 375°. Arrange the bacon in a single layer in a large heatproof skillet. Bake for 10-20 minutes (depending on the thickness of the bacon) until crispy and rendered fatty. Using tongs, transfer the bacon to a paper towel-lined plate. Once cool, break it up with your hands into a medium bowl.
- step 2Meanwhile, in a large pot of boiling salted water, cook the pasta and bay leaves, stirring occasionally, until very al dente, about 2 minutes less than package directions. Drain, discarding the bay leaves and reserving 1/2 cup of the pasta liquid.
- step 3In a large bowl, toss together Gouda cheese, 4-cheese blend, and Mexican blend cheese. Add sazon, Creole seasoning, Worcestershire, tomato paste, adobo, garlic powder, and garlic salt and mix to combine. Add pasta and mix gently.
- step FourAdd milk and mayonnaise and top with hot sauce (depending on spiciness preference). Mix, adding reserved pasta water as needed, until glossy and smooth. Just add the peppers and kielbasa and toss. Transfer to a deep 13-inch x 9-inch baking dish.
- step FiveAdd the Parmesan cheese to the bowl with the bacon and stir to combine. Sprinkle bacon mixture over pasta mixture.
- step 6Bake the macaroni and cheese for 30 to 40 minutes, until the topping is golden brown and edges are browned and bubbly.
