For Hilary Camplain, no Christmas cookie plate is complete without this treat. She tweaked her great-grandmother’s molasses cookies by substituting orange-scented brown butter for shortening and adding spiced rum for a warm, spiced flavor.

2 teaspoons clementine or orange zest
1/4 cup unsulfurized molasses
2 tablespoons spiced dark rum
1/2 teaspoon ground cloves
1/2 teaspoon grated ginger
1/4 teaspoon ground mace or grains of paradise
2 cups and 1 tablespoon flour
1/4 cup sugar for finishing cookies, edible gold glitter or dragée for decoration
1. Melt the butter in a medium saucepan over medium heat and cook until the butter is golden brown and fragrant.
2. Remove from heat, add orange zest and rum and stir. Let it cool slightly and set aside to prepare the dry ingredients.
3. Combine baking soda, salt, flour, and spices in a medium bowl or gallon-sized zip-top bag. Set dry ingredients aside. Add sugar and molasses to the browned butter mixture. Stir with a wooden spoon and let cool, then add the eggs and mix.
4. Pour the dry ingredients into the saucepan and stir gently until the flour mixture is completely combined. Transfer the dough to a gallon-sized zip-top bag or bowl and chill for at least 1 hour and up to 5 days.
5. Preheat oven to 350 degrees. Roll the chilled dough into 1-inch balls and roll the dough balls in the sugar.
6. Place on a baking sheet lined with parchment paper, 1 inch apart, sprinkle with edible glitter or confectioner’s sugar, if using, and bake for 8 to 10 minutes.
