Marty Ramsey’s family may have been laughing when she entered Brickle Caramel Thumbprint Cookies into the Tulsa World 12-Day Cookie Contest.
But Ramsay, one of the 12 winners, has the last laugh.
Ramsay knew he had a unique cookie recipe to share. Since she discovered this recipe about 30 years ago, she has never seen another recipe like it.

“I was wondering where I got them. It was at a Bible study cookie exchange 28 years ago. Everyone just brought cookies and exchanged them. I especially liked this one, so I gave it to a friend. I asked for the recipe,” Ramsay said.
She thinks this recipe may have come from the little Pillsbury cookbooks you often see at checkout counters.
The recipe is simple, but the toffee pieces make it even more special. Fill the thumbprint cookies with melted caramel. You can put leftover caramel to good use.
Brickle caramel thumbprint
1 cup softened margarine (butter can also be used)
3/4 cup almond brickle baking chips
In a large bowl, mix together the sugar, eggs, margarine or butter, and vanilla until fluffy. Add flour and baking powder.mix until well mixed
1/4 cup milk
Place the caramel in a small saucepan over medium heat and dissolve the milk. Stir until smooth. Spoon 1/2 teaspoon into the center of each cookie.
