Get ready to taste the best vegetarian chili you’ve ever had! So hearty and flavorful, you won’t even notice there’s no meat in it. Warm, cozy, and loaded with beans and vegetables! This one-pot chili combines tender beans, colorful vegetables, and a variety of spices. Simmer everything together to create the ultimate vegetarian chili to comfort you on a cold day. This is a great chili recipe to make on the stove, in the slow cooker, or even in the Instant Pot. No matter which cooking method you choose, you’ll love how easy it is to mix.
My goal is to add more vegetables to dinner. Especially if your family can get more nutrients in a day. Try this easy fried rice, air fryer stuffed peppers, or this amazing veggie chicken stew. Your family will love it!
Materials needed
It doesn’t have to have meat in it to be chili. In my opinion, chili is all about the beans and the flavor. Trust me, you won’t get meat in a vegetarian chili recipe. Exact measurements are listed in the recipe card below.
- Olive oil: For stir-frying foods such as onions and garlic.
- onion: Chop up the flavor boosters found in pumpkin chili peppers to add sweetness and texture.
- green pepper: I used red and green bell peppers to add color and texture.
- garlic: A tiny clove that packs a big punch, garlic makes everything delicious.
- green chili pepper: Add a Mexican flavor to this chili.
- Fire-roasted tomatoes: I love the char and flavor of canned fire-roasted tomatoes in this recipe. Adds depth to the flavor!
- Kidney beans, chili beans, black beans: The best bean trio that adds protein and creaminess to vegetarian chili.
- vegetable soup: An important ingredient for making vegetarian chili. The soup has a flavorful base of chili peppers.
- spices: Time to break out the spice rack! I used lots of chili powder, cumin, dried oregano, and smoked paprika. I like that the vegetarian chili is very well seasoned!
- salt: Season as you like!

Gather your ingredients, grab your soup pot, and start cooking! Vegetarian chili is super easy to prepare. Just sauté the onions and garlic and mix all the ingredients together. Cook until hearty, rich, and packed with flavor.
- Fry the onions, peppers, and garlic: Heat a large pot over medium heat. Add oil and onions and sauté until onions are soft. Then add the chopped garlic and cook for another minute.
- combine materials: Add canned tomatoes, green chili peppers, soup, chili beans (with juice), kidney beans, black beans, chili powder, cumin, paprika, oregano, and salt.
- boil: Once it boils, lower the heat and simmer for 20 minutes.
- serve: Taste and adjust the seasonings according to your preference. Decorate with your favorite toppings and enjoy!

Can I cook in a crockpot or instant pot?
yes! This vegetarian chili recipe can be cooked in both the slow cooker and Instant Pot. This recipe is incredibly easy no matter which method you choose.
- Crockpot vegetarian chili: Saute the onions and peppers before adding the ingredients to the slow cooker. Heat the oil in a medium-sized skillet over medium-high heat. Add onions and peppers and simmer for 5-6 minutes. Once softened, add the garlic and fry for another 30 seconds. Add onions, peppers, and garlic to slow cooker with remaining ingredients. Cook on low heat for 4-5 hours and on high heat for 2-3 hours.
- Instant Pot Vegetarian Chili: To cook this in the Instant Pot, add olive oil, onions, and peppers in “Sauté” mode. Cook until softened, then add the garlic and cook for another 30 seconds. Add the remaining ingredients to the Instant Pot and cook on “Manual” for 20 minutes. Then slowly release the steam and enjoy.

Here are some ideas on how to easily transform this vegetarian chili. Depending on the ingredients you have at home, this chili will be different every time.
- Use different vegetables: Easily vary this chili with different vegetables! I like to add bell peppers, chopped zucchini, or peas.
- Increase temperature: Make it spicy by adding toppings like red pepper flakes, cayenne pepper, or Tabasco sauce!
- Switch beans: I love the chili beans in this recipe because it has tomato sauce in it. Feel free to use pinto beans or white beans, although they add so much flavor. This chili pepper is so versatile that you can use it with any beans.
- topping: Top the chili with your favorite toppings! We love cilantro, lime juice, sliced avocado, and jalapenos. It’s also delicious with sour cream and cheese!
Storing leftover vegetarian chili
This vegetarian chili is perfect for meal prep for the week. Make a big batch for future lunches or dinners. It’s so easy to save and enjoy later.
- In the refrigerator: Once the chili peppers have cooled, store them in an airtight container in the refrigerator for 3 to 4 days.
- Inside the freezer: After the chili is cooked and cooled, transfer it to a freezer-safe container or resealable freezer bag. Be sure to leave space at the top to allow for expansion as the soup freezes. Then label it with the date. This chili pepper will last about 2-3 months.
- To reheat: When you’re ready to use frozen chili peppers, simply thaw them in the refrigerator overnight. After defrosting, heat in the microwave or microwave until heated through.

- 2 tablespoon Olive oil
- 1/2 yellow onion, diced
- 1 1/2 cup green pepper, diced (I use a combination of red, green and yellow)
- 2 teaspoon garlic, chopped
- 28 ounce Fire-roasted tomatoes, with juice
- Four ounce green chili pepper, canning
- 3 cup vegetable soup, or water
- 15 ounce Black bean, Rinse and drain
- 15 ounce Chilli Beans, with juice
- 15 ounce kidney beans, Rinse and drain
- 2 tablespoon Chili powder
- 2 teaspoon smoked paprika
- 1 tablespoon ground cumin
- 1 tea spoon dried oregano
- 1 tea spoon coarse salt
- avocado, cilantro, or lime; For topping
Heat olive oil in a large pot over medium heat. Add onions, peppers, and garlic. Fry until soft.
Add canned tomatoes, green chiles, broth, chili beans, kidney beans, black beans, chili powder, cumin, paprika, oregano, and salt.
Once it boils, reduce the heat to low and simmer for 20 minutes.
Taste and adjust seasoning as needed. Enjoy chili peppers with your favorite toppings!
