Wellston resident Laura Crera is a finalist in the Minnesota Cultivated Wild Rice Council’s 2023 National Wild Rice Recipe Contest.
Creative wild rice recipes were submitted from all over the country in the categories of appetizers, soups, salads, sides, and main dishes. A runoff election was held earlier this summer to determine the 14 finalists who will compete for cash and the coveted title of People’s Choice Champion. Wild rice beer bread with maple spread

2023 Wild Rice Recipe Contest Finalist
1 cup cooked wild rice
2 1/2 cups flour
1 tablespoon baking powder
1 teaspoon sea salt
1/2 cup sugar
12 oz nitro stout, warmed
1/3 cup melted high-quality butter
1 tablespoon canola oil
Spread (blend with mixer and cool):
4 ounces softened unsalted butter
2 ounces Neufchatel cheese
1/2 teaspoon sea salt
2 ounces pure maple syrup
1 ounce canola oil
1 oz nitro stout
Preheat oven to 350 degrees Fahrenheit. Combine wild rice and flour in a large bowl. Add baking powder, salt and sugar and mix. Add stout. Mix the mixture until the dough is well combined. Place in prepared loaf pan. Spread evenly. Make a groove in the center using a spatula. Combine butter and canola oil in a small cup. Pour into the channel. Bake for 30 minutes. Rotate the pan. Bake for 25 minutes. Take a 10 minute break.

According to the Minnesota Grown Wild Rice Council, National Rice Month was established in 1991 to raise rice awareness and recognize the contribution the rice industry makes to the American economy. Preparing a new delicious wild rice finalist recipe is the perfect way to participate in this annual celebration. Wild rice, also known as grain caviar, has long been a favorite of cooks, used in soups, salads, appetizers, sides, main dishes, and even desserts. Wild rice is a whole grain with no preservatives or additives, and is a whole grain with no sodium, sugar, saturated fat, or cholesterol, and is higher in protein and lower in calories than white or brown rice. Wild rice is gluten-free and a good source of dietary fiber, phosphorus, calcium, and iron.
